This is my first attempt at a veggie burger. It is a gluten-free, vegetarian and a vegan recipe. It is delicious, nutritious and filling! And it has a kick to it for our spice lovers!
Veggie Burger: (6 servings)

Ingredients:
1 can of chickpeas, drained, rinsed, and mashed
½ red onion, diced, 1 zucchini, grated
1 cup mushrooms (any variety), diced
2 tbsp fresh cilantro, finely chopped
1 tbsp red wine vinegar
1 tbsp sriracha
2 tbsp tahini
1 tsp cumin
½ tsp garlic powder
1 tsp black pepper
1 tbsp ground flaxseed
½ tsp himalayan pink salt
1 cup gluten-free quick oats
2 tbsp olive oil + 1 tbsp for sautéing
Directions:
Mix all ingredients and form 6 patties
Place in refrigerator for 10-15 minutes until patties become firm
Heat skillet with 1 tbsp of olive oil on medium heat and sauté patties or 6 minutes each side.
Serve over a mixed salad
*Freeze leftovers for future use or store in fridge for 2-3 days
