Veggie Burger on Fire!!!

This is my first attempt at a veggie burger. It is a gluten-free, vegetarian and a vegan recipe. It is delicious, nutritious and filling! And it has a kick to it for our spice lovers!


Veggie Burger: (6 servings)


Ingredients:

  • 1 can of chickpeas, drained, rinsed, and mashed

  • ½ red onion, diced, 1 zucchini, grated

  • 1 cup mushrooms (any variety), diced

  • 2 tbsp fresh cilantro, finely chopped

  • 1 tbsp red wine vinegar

  • 1 tbsp sriracha

  • 2 tbsp tahini

  • 1 tsp cumin

  • ½ tsp garlic powder

  • 1 tsp black pepper

  • 1 tbsp ground flaxseed

  • ½ tsp himalayan pink salt

  • 1 cup gluten-free quick oats

  • 2 tbsp olive oil + 1 tbsp for sautéing


Directions:

  1. Mix all ingredients and form 6 patties

  2. Place in refrigerator for 10-15 minutes until patties become firm

  3. Heat skillet with 1 tbsp of olive oil on medium heat and sauté patties or 6 minutes each side.

  4. Serve over a mixed salad

*Freeze leftovers for future use or store in fridge for 2-3 days
